Garbanzo Bean Loaf (8 servings)
4 cups cooked, blended chickpeas
2 cups cooked brown rice
2 cups tomato sauce
1 TBSP dry mustard
1 cup grated carrots
Juice of 1/2 lemon
Add 1 1/2 tsp garlic or onion powder (optional)
Preheat to 350. Mix beans and rice then all other ingredients. Spoon into loaf pan and bake for 30 minutes; cover with foil if top browns to quickly. Leftovers good for sandwiches.
Savory Lentils
3/4 cup lentils
2 1/4 cup water
1 bouillon cube
3 large minced garlic
1 tsp dried rosemary
3/4 tsp dried thyme
1/2 tsp dried savory
1/4 tsp dried mustard
1 bay leaf
1/2 tsp blackstrap molasses (not sure if necessary)
black pepper
High heat, combine all, boil, stir, lower, heat, cook 35-40 minutes.
Red beans
2 cups cooked red beans
4 clove garlic
1 large onion
4 ribs celery
3 bay leaves
2 tsp thyme
1 tsp oregano
1/4 tsp red pepper
1/2 tsp black pepper
1/2 Tbsp Tabasko
1 tsp Liquid Smoke (this is a vegan recipe – gives it the flavor you might get from pork; could be optional although I don’t know what it tastes like without it)
salt to taste
combine all and heat til boiling and then reduce to low and simmer for 10 minutes; mash some of the beans. Delicious with homemade biscuits and coleslaw. -
