Barre City is our adopted hometown.  We're raising our kids here.  We want all the best for them, for us, and our neighbors.  We feel strongly that we can only be a healthy community if we all have access to healthy food.  So many of our friends, classmates, and coworkers don't.  It's time for a downtown grocery store.  And, what better way to bring one about than to do it together, cooperatively.

    Here are a few of the recipes that I’m using for this challenge:

    Garbanzo Bean Loaf (8 servings)
    4 cups cooked, blended chickpeas
    2 cups cooked brown rice
    2 cups tomato sauce
    1 TBSP dry mustard
    1 cup grated carrots
    Juice of 1/2 lemon
    Add 1 1/2 tsp garlic or onion powder (optional)
    Preheat to 350. Mix beans and rice then all other ingredients. Spoon into loaf pan and bake for 30 minutes; cover with foil if top browns to quickly. Leftovers good for sandwiches.

    Savory Lentils
    3/4 cup lentils
    2 1/4 cup water
    1 bouillon cube
    3 large minced garlic
    1 tsp dried rosemary
    3/4 tsp dried thyme
    1/2 tsp dried savory
    1/4 tsp dried mustard
    1 bay leaf
    1/2 tsp blackstrap molasses (not sure if necessary)
    black pepper
    High heat, combine all, boil, stir, lower, heat, cook 35-40 minutes.

    Red beans
    2 cups cooked red beans
    4 clove garlic
    1 large onion
    4 ribs celery
    3 bay leaves
    2 tsp thyme
    1 tsp oregano
    1/4 tsp red pepper
    1/2 tsp black pepper
    1/2 Tbsp Tabasko
    1 tsp Liquid Smoke (this is a vegan recipe – gives it the flavor you might get from pork; could be optional although I don’t know what it tastes like without it)
    salt to taste
    combine all and heat til boiling and then reduce to low and simmer for 10 minutes; mash some of the beans. Delicious with homemade biscuits and coleslaw.
